Avocado Salad Bagel

This is a tasty and colourful addition to any lunchbox and is ideal to take to school or work. So simple to make and also a great way of getting 2 of your 5-a-day.
Ingredients
- ½ a wholemeal bagel, toasted
- 1 tablespoon of frozen sweetcorn
- ¼ an avocado, chopped or mashed
- Pinch of paprika
- Pinch of chilli powder (optional)
- 2 lettuce leaves
- 4 slices of tomato
- 1 slice of onion
- 4 slices of cucumber
What you will need
- Chopping board
- Chopping knife
- Mixing bowl
Method
- Quickly defrost the sweetcorn by microwaving it for approximately 15 seconds.
- Toast your bagel and as it is toasting, combine the avocado with the defrosted sweetcorn, paprika and chilli powder.
- Place the lettuce leaves, tomato, onion and cucumber slices on the toasted bagel and top with the avocado mixture.
Serving suggestions
Want some extra protein? Add flaked tuna to the avocado mixture.
